Golden beets were one of many of our farmer’s market purchases this past weekend - beets are one of my
favorite foods ever - not only are they sweet but they can be used more than once (hello, beet greens!). Until recently, I hadn’t really tried making them for myself. Before Thanksgiving, Bryan and I had experimented a few times with purple beets and while they are delicious, they stained my fingers purple for a few days! Dammit!
Tonight, I found a recipe for golden beets on Happy Cow (http://www.happycow.net/recipes.php?id=118) and we followed most of it to a tee making a few modifications as we didn’t have sesame seeds or fresh herbs. We basically put about 4 golden beet roots in a pot of water and let it boil for about 25 minutes (the recipe said 30-45 minutes but our beets were on the smaller side), and then chopped them up and added a little olive oil, rice vinegar and salt and pepper.
Easiest (not to mention healthiest) dinner ever- golden beets, carrots, apples, spinach and goat cheese - I highly recommend you try it.

You are a such a beet lover! you should also write a post about your spaghetti squash with cheese and steamed veggies dinner - it’s so delicious!

I made this salad this weekend after a lovely trip to the farmers market. Pretty much the same as you except I used arugula, fresh (like made the day before fresh!) goat cheese, and pastasios. SOOOO yummy! Great post lady, keep up the good work!
Oooh, pistachios are a GREAT idea. We should do that next time, so much more original and fun than boring old almonds! :)
