When Bryan first brought home Halloumi cheese, I was a little skeptical. I couldn’t imagine what kind of cheese could be good for both frying and grilling. And while he cooked it, I sat in the kitchen doubting that anything called Halloumi could actually taste good. And was I ever wrong! Halloumi cheese is absolutely delicious! It has a mozzarella like consistency and very salty flavor (yum!). Its made from a mixture of goat’s and sheep’s milk and has a high melting point which is why it can be grilled, fried or baked very easily. Since we don’t have a grill, we decided to bake it using a slightly modified recipe from 101cookbooks.
Here’s the recipe:
Ingredients:
Halloumi cheese cut into 1/4 slices
Lemon wedges
Green beans, cut into small pieces and sauteed in a bit of water, olive oil and salt for a couple minutes
Sliced chives
Sea salt
Pre-heat the oven to 375. Place the halloumi slices and lemon wedges directly on foil and bake for 30-45 minutes (flip the halloumi once half way through so it browns on both sides).
To serve, put a small pile of green beans on top of each halloumi slice and squeeze some lemon juice on the green beans. Sprinkle with chopped chives and some sea salt. And enjoy!
