Recipe: Artichoke and Wild Rice

I have been craving artichokes.  I love the process of peeling (and eating) all the leaves until you get to the heart - its so fulfilling.  Tonight, I made steamed artichokes with a side of wild rice with broccoli and mushrooms.  Since I didn’t have any lemon or dip for the artichoke leaves, I decided to boil them in  a little olive oil, salt & pepper, and garlic.  I wasn’t sure how it would turn out - it was a little experiment - but it was actually really delicious and fresh tasting.  Artichokes

Ingredients:

2 medium artichokes

Salt & pepper to taste

2 garlic cloves

2 tbsp olive oil

1 tbsp butter

1 cup wild rice

2 cups veggie broth

1 head broccoli

4-6 mushrooms (sliced)

Artichokes:

Put the artichokes stem down in approximately 8-10 cups of water in a large pot with 1 tbsp olive oil, one clove of garlic, and salt & pepper to taste.  Bring to a boil.  Reduce heat and allow to simmer for 40-50 minutes.

Wild Rice with Mushrooms and Broccoli:

Combine one cup of wild rice with 2 cups of veggie broth and 1 tbsp of butter in a pot.  Bring to a boil and stir.  Reduce heat, cover and let simmer for 50 minutes.  In another pan, heat 1 tbsp olive oil and garlic.  Add mushrooms and broccoli and saute.  Add to rice.

Boiling, eh? Interesting. I’m always chopped about a 1/4 to a 1/2 inch off the top of the artichoke, placed it top down in a large pot and steamed it so it doesn’t get to soggy. How does boiling the artichoke turn out?

It actually turned out pretty good - not soggy at all! I think it made the heart a lot easier to peel and eat too. Usually when I make artichokes, I error on the side of not cooking long enough and it gets tough in the middle. Plus boiling it with all the seasonings, made it taste great without anything to dip it in…

Steaming is always a good option. I need a steamer. :)
