Last night, I went to my favorite spinning class taught by Tina at the Crunch on Embarcadero. If you’re into spinning and haven’t yet taken a class with Tina, you’re missing out. Its an amazing workout. She leaves me with jelly legs that make a one hour class feel like three and she gets you all pumped for each sprint with a drill sargent like yell. Love it. Love her.
Since it was pretty late when I finally got home, I was looking for something easy, healthy and quick to make. I tried some Trader Joe’s Masala Simmer Sauce with green beans, tofu, and crimini mushrooms. Its pretty good stuff and super easy. You just dump the whole jar with a little less than one cup of water into a skillet with your diced veggies and tofu and let simmer for 10-15 minutes. I used the whole cup of water last night and it was a little runny so I suggest using maybe 3/4 of a cup instead. We had some leftover rice that Bryan dumped in with it and I tore up a Trader Joe’s Brown Rice Tortilla and dipped it in mine. Not quite Naan bread, but still tasted great (and a lot less fat!).
TJ’s has a lot of these Indian simmer sauces - I think I’ll try a different one next time - especially if they have one that is a little spicier!

I love TJ’s simmer sauces! This is the closest I come to cooking - exactly as you described, with tofu and veggies. I agree about it being too runny with the recommended amount of water. Istarted cooking the veggies and tofu first, then dumping the sauce with no water. TJs also makes a ginger stir fry sauce that works the same way and is super delicious and SUPER gingery! You’d love it, Jamie!
