Quick & Easy Recipe: Boiled Cabbage and Amaranth

After the last few rainy days in San Francisco, it was refreshing to see the sun shining.  To take advantave, Bryan and I left the office while it was still light out (imagine that!) and went on a run to the Golden Gate Bridge and then through the Presidio.  After our run, we were starving and decided to make red cabbage and amaranth.  I tried a different boiled cabbage recipe - it was super easy and really delicious!

Ingredients:

1 medium red cabbage, sliced into 6 wedges

Salt and pepper to taste

2 tbsps butter, melted

1 cup amaranth, cooked

Heat 1/2 inch of water to a boil in a large skillet.  Add the cabbage and salt, cover and let simmer for 8 minutes.  Turn the cabbage over and let simmer for 8-10 more minutes.  Drain the water and simmer to let the moisture off.  Add the melted butter and salt and pepper to taste.  Serve with the amaranth.

That’s all you ate for dinner?!?! After going for a run?!?! You people are seriously undernourished. I’m hoping your recipe is calling for amarath grain since that is a great source of protein for your vegetarian diets. However, I do not see how 1/2 cup each can provide nearly enough calories for your active lifestyles.

I really don’t know how you can write a health blog when you are clearly starving yourselves! I just hope you’re eating enough carbs during the day.

Haha, trust me, we pack enough to eat during the day to have a lighter dinner on certain nights. Plus, we often eat (and did eat) bread or Kind Bars or something else before the run or work-out.
Don’t worry, neither of us are starving. But I’ll let you know if either of start to look like Allie from The City and then you can be concerned. :)
