Recipe: Quinoa Salad with Edamame and Cherry Tomatoes

IMG_1935We found the perfect summer recipe - its light, fresh and nutritious - and perfect for dinner or as a snack and can be the perfect party food for your next bbq or picnic.

Ingredients:

3 cups cooked quinoa

1 cup shelled edamame (can also use frozen)

1 pound yellow and red cherry tomatoes, in quarters

1 cup finely chopped fresh parsley

1 cup chopped green onions

1/4 cup fresh lemon juice

1/4 cup olive oil

1 tsp sea salt

1 tsp fresh ground black pepper

Combine edamame, tomatoes, parsley, onions with the quinoa.  Mix well.  Once mixed, add the lemon juice and olive oil.  Top with salt and pepper.  Enjoy!
