Since we’re on the subject of egg replacements, I thought I’d send over this great idea from the folks over at Green and Greener.
For a great egg (or oil) substitute that you can make at home, try this!
- Mix a handful of organic pitted, sun-dried prunes in a powerful blender with 1 small skinned/pitted organic fuji apple
- Add a couple of tablespoons of water and blend on high speed. You may need to add more water. Consistency should be“foamy” and color should be “café au lait”
- Use same amount of oil substitute as recipe calls for, and about ¼ cup for each egg you are replacing. FYI that this works better when you are replacing oil OR egg not both in the same recipe
