Recipe: Kale Wrap with Quinoa, Adzuki Beans and Avocado

For the  perfect post-yoga or workout meal, try these dinosaur kale wraps - they are light, refreshing, and really easy!  We made a fruit smoothie to go with it, which makes for a great meal on a warm summer night.

Ingredients for Kale Wrap: smoothie and kale wraps

  • 2 dinosaur kale leaves
  • 1/2 cup cooked quinoa
  • 1/2 cup cooked adzuki beans (black or red beans will also work)
  • 1 avocado
  • 1 carrot, grated
  • 1/4 cup extra firm Wildwood tofu cubed
  • balsamic vinegar to taste

Wash and place dinosaur kale leaves on a plate.  Put avocado, quinoa, adzuki beans, grated carrot and tofu on top.  Drizzle balsamic vinegar on top.  Fold leaves up and tuck in ends.  Cut into pieces if you’d like.

Ingredients for Fruit Smoothie:

  • 1/2 mango
  • 1 banana
  • 1/2 cup ice
  • 3/4 cup POM juice (orange juice also works)
  • 1/4 cup frozen peach slices

Place all ingredients in a blender and enjoy!
