Yummy Vegan Pizza

One of my favorite things about the Thrive Diet is the pizza if you can even call it that.  I’ve tried a couple different recipes (of course with slight modifications) and both were amazing - the Adzuki Bean Quinoa Sesame Pizza and the Curry Lentil Rice Pizza.  Unfortunately, we ate all of the Adzuki Bean Quinoa Pizza before we could get a picture.  Guess I’ll just have to make it again.

Here’s the Curry Lentil Rice Pizza - made from all natural ingredients - DELICIOUS:

Here’s the Lentil Curry Rice recipe - modified a bit from the original:

Crust

1 1/2 cups cooked brown rie

1 1/2 cups ground lentils

1/4 cup ooconut oil

2 tsp curry powder

1 tbsp basil

sea salt to taste

Topping

1 tomato, sliced

1/2 onion, diced

1 cup chopped celery

1 cup chopped red bell peppers

1/2 cup asparagus, halved

1/2 cup chopped green onions

1 tsp oregano

1 tsp thyme

Sauce: Spicy Sun-Dried Tomato Marinara Sauce

1 cup sun-dried tomatoes

1 clove garlic

1 cup chopped tomatoes

1 cup water

1/2 cup grated cucumber

3 tbsp coconut oil

1 tbsp balsamic

1 tsp oregano

1 tsp rosemary

1/4 tsp thyme

sea salt to taste

For the Pizza:

Pre-heat oven to 300.  In a food processor, process all crust ingredients until mixture starts to ball up.  Lightly oil baking tray with coconut oil.  Spread mixture on tray about 1/4 inch thick.  Spread sauce on crust and add topping.

For the Sauce:

Soak the sun-dried tomatoes in the water for 20 minutes.  Retain this water.  In a food processor, process all ingredients, including sun-dried tomatoes water, until desired consistency is reached.

Like you said, it’s hard to call that pizza! But of course he says in the book that his “pizzas” really aren’t. I think I’m going to make this one tonight. As for the adzuki bean one, did you find adzuki beans in a normal grocery store?

I found adzuki beans in bulk at Whole Foods - this was by far one of the best “pizzas” I’ve ever eaten. And, feel free to mix it up with the veggie toppings. I highly recommend including the bean sprouts, really gives it that extra crunch. We tried asparagus on our last pizza, the lentil curry rice one, and it was really amazing! :) Happy cooking.

This looks really good! Do you think the coconut oil can be substituted with olive oil or canola oil? Also I am lacking a food processor… think just mixing it all together or using a blender might work okay?

yes, I am sure you could substitute out the coconut oil for olive oil or even flax or hemp oil. As for the blender, I tried that the first time I made this and while it works, its really difficult and doesn’t blend quite as well as it does in the food processor. But if you have time and patience, the blender can work. :)

I am eager to make the curry lentil pizza.

However, I am not sure about the concept of “ground lentils”.

Do I simply empty dry lentils from the bag into the grinder and push the button. Or should I soak or cook the lentils before putting them in the grinder. Though that would be kinda messy. I think I’ve answered my own question.

I put the dry lentils into the grinder and pushed the button. It wasn’t exactly messy, just very noisy!!!

Thanks for the tip.

Before baking I tasted the crust, it was like ingesting sand. However, after baking the texture is smooth.

Hi, I just tried making the Adzuki Bean Quinoa Pizza tonight. Unfortunately the crust just didn’t turn out and was still soft and wasn’t crispy by any means (even after letting it cook for an extra 15minutes). Basically I could have used a spoon.

I did use the Sweet Pepper Hemp Pesto which I also didn’t entirely care for. I am looking forward to trying out the Spicy Sun Dried Tomato Marinara though.

Any suggestions?

I’m a new convert to being vegan and am following the Thrive diet routine to make sure I get all the nutrition I need.

This website is a great find.

I also tried Thrive Pizza for first time, and wonder if one maybe should prebake the crust a few minutes, if one want it to get crusty? Or add (more) flour of any kind, e.g. chickpea och buckwheat, or maybe reduce the topping layers? For us it was more like it was when speading it out with only difference of beeing a little warmer… it didn’t help to wait for 15-20 minutes. But the taste of the pizza was great!

I found this blogg when searching for Thrive Diet Pizza Crust to see if more having the same experience. Great site!
