Another one of my favorite, not to mention amazingly EASY recipes in the Thrive Diet is the Almond Flaxseed Burgers. They are exactly what they sound like - ground up almonds and flaxseed with a little garlic, balsamic, and coconut oil. We made them the other week and served them up on hemp bread with a few pineapple rings. YUM!
Here’s the recipe:
- 2 cloves garlic
- 1 cup almonds
- 1/2 cup ground flaxseed
- 2 tbs balsamic vinegar
- 2 tbs coconut oil
- Sea salt to taste
Preheat oven to 300. Put all ingredients in a food processor. Process until well blended. Bake for 35 minutes.

I’m going to try cooking the “burgers” and pineapple rings on the grill tonight. I’ll let you know how it goes.
Yes, please do! Mine were a little tricky to keep together - I don’t think I added enough coconut oil on the first go….so very important step!
I agree, the first few I think I skimped on the coconut oil a bit. We added some minced onion and gave it a few more zips in the processor and they worked pretty well on the grill, but I think I’ll opt for the oven next time for convenience.
I tried these same burgers the other day (I’m still on the Thrive kick too), and found them to be delicious. Although it tasted good in the burger, I realized later that the garlic was just way too potent, I was tasting it the rest of the day and it almost made me sick later. I suppose it’s very good for you, but next time I’ll have to reduce it.
Thanks for the comment :-) This looks really good. I’ve tried Ani Phyo’s flaxseed burger with sunflower seeds- it was ok. I absolutely love almonds, so I’ll definitely give this a try! Looks like such a nice meal with the pineapple.
