We did some more cookie experimenting this weekend and made some virtually sugar-free healthy cookies. Instead of sugar, butter, and eggs, we used banana, coconut, and nuts!
These were really good cookies, but almost worked better as a breakfast treat, as they weren’t quite sweet enough for me for an after dinner chocolate fix.
- 3 bananas
- 1 tsp vanilla
- 1/4 cup coconut oil (barely warm)
- 2 cups rolled oats
- 2/3 cup ground almonds
- 1/3 cup coconut, shredded
- 1/2 tsp cinnamon
- 1/2 tsp fine sea salt
- 1 tsp baking powder
- 1 1/2 cup chocolate chip
Preheat the oven to 350 degrees. Combine bananas, vanilla, and coconut oil in a mixing bowl. In another bowl, whisk together oats, ground almonds, shredded coconut, cinnamon, salt, and baking powder. Add dry ingredients to wet ones and stir until combined. Fold in chocolate chips. Bake 12-15 minutes.
