Lately, I’ve been kind of obsessed with bananas, well ever since I was cruising around Nicaragua and Costa Rica and discovered that they sell amazing plantain chips just about everywhere you turn. I can’t even begin to count how many different kinds I tried!
Today, I brought a small Tupperware of veggie leftovers for lunch (stuffing from last
night’s stuffed bell peppers — which I will post the recipe for a little later) and was still hungry. I felt like I needed something sweet, bought a nectarine, and just as I was about to make it out of the market without buying too much, these little Explorer’s Bounty banana puffs caught my eye. They are called puffed banana and taste like, well, puffed banana. And the only ingredient, is you guessed it banana (organic ones, even).
They’re really good if you like bananas, which clearly I do.

I love plantain chips! Had them for the first time in Cote d’Ivoire. mmmm. Now I miss them!
