I had another intense day of working out this week so treated myself to an indulgent dinner. I made this delicious asparagus with quinoa and spring milk dutch cheese dish.
It was so beautiful!
Here’s the recipe
- 2 cloves garlic, minced
- 2 tbsps olive oil
- 1 tbsp thyme
- 1 bunch of asparagus
- 1 lemon
- 1 cup grated spring milk dutch cheese (gruyere will also work)
- 2 cups cooked quinoa
- Sea salt and pepper to taste
Heat a a large saute pan over medium heat. Once hot, add olive oil, garlic and thyme. Once garlic is brown, add asparagus and spread out onto bottom of pan. Cover and lower heat. Cook for 7-10 minutes (or until you reach desired tenderness). Pour asparagus over quinoa and pour any remaining olive oil, garlic and thyme mixture on top. Squeeze lemon over quinoa and asparagus and add grated cheese and a little salt and pepper to taste. And enjoy!
