I’ve never liked vegan cheese - from the first time I tasted a slice of it in high school until now, I just can’t understand the appeal. It has a weird rubbery aftertaste and almost reminds me of the fake tasting cheese you’d find in a Taco Bell burrito. I was feeling experimental tonight, saw some Soy Sations shredded cheese at the market and thought I’d give it a whirl. Yuck. It still tasted horrible straight out of the bag . Maybe it was the brand?
Anyway, decided I’d make use of it anyway and stuffed it inside of some stuffed bell peppers. And it tasted pretty good like that.
Here’s the recipe:
- 2 cloves garlic, minced
- 1 tbsp thyme
- 1 tbsp olive oil
- 1 large yellow or red bell pepper
- 1 handful of shiitake mushrooms
- 4 oz vegan shredded cheese
- 1 tomato
- Salt and pepper to taste
Preheat oven 350 degrees. Cut top of bell pepper off and scoop out insides. Heat oil, garlic and thyme in a large skillet until garlic browns. Add the mushrooms and cook over medium heat for 3-4 minutes. Remove from stove and let cool. Take mushroom mixture and stuff it into bell pepper. Add cheese and sliced tomato on. Bake for 12-15 minutes.
