All in a Day’s Work

Yesterday, was another busy day - I literally was non-stop from the moment I woke up at 5:45 am for my gym workout until I crashed out in my bed around 10:00 while watching the news…

After my workout yesterday, I am very proud to say, I changed it up and had a  strawberry, banana, acai and hempseed smoothie.  Totally delicious.

I used some time at lunch to make a run to Whole Foods to decorate my very empty fridge and grab some lunch. I had sesame broccoli and tempeh (yum!!).

After work, I had to rush over to Sports Basement to pick up some additional supplies for bootcamp since all of a sudden, I have a lot more bootcampers!  Finally after all that running around, I  went home and decided to do a little therapeutic cooking.  I whipped up the most amazing risotto style barley with arugula, walnuts, shallots, onions, orange/lemon zest, orange slices, creme fraiche, and parmesan which I found the recipe for in Super Natural Cooking (thank you Heidi Swanson) .

Here’s the shallots, garlic and yellow onion all chopped and waiting to get mixed…

Wow, even with your super busy day, you managed to pull together an amazing risotto? I am seriously amazed! That risotto sounds and looks deeeelicious!

Oooh yum, look at all that sauce on top of the tempeh!
