Looking through my photos today, I realized what a slacker I’ve been! I still have all of these beautiful food photos from cooking for my family the other weekend that I have been meaning to share. And I’m sorry for holding out on you, but things have just been extremely busy - with work, bootcamp and life in general - excuses, excuses, I know.
As many of you know, I was home two weekends ago to be with my family while my dad was undergoing a pretty serious heart surgery. Since my mom obviously had a lot on her plate - visits to the hospital, my almost 3 year old niece who has just learned how fun it is to put stickers all over everything, and keeping the family, friends, co-workers and the rest of the world up to date on his progress - I was in charge of the cooking all weekend. I obviously didn’t mind that job — I love cooking — I just knew it was going to be a little bit challenging to cook for a bunch of Meat-A-Saurus’s. My goal was to make vegetarian food that could please everyone - from the veggie lover to those on a meat and cheese only diet.
Dinner #1 was flatbread pizza night. These were a crowd pleaser. And, oh so easy!
Its simply flat bread topped with a mixture of hummus and ricotta and sauteed veggies (we did broccoli, bean sprouts, garlic, shallots, and onion) and then baked for 30 and topped with fresh parmesan. Delicious.
Dinner #2 was a little more involved. I was feeling ambitious. The first course was a simple miso soup with tofu and Wakame followed by a Hijiki/Edamame salad and then veggie sushi bowls with an orange viniagrette dressing. So good!

Love this salad! It was a crowd pleaser - my niece kept asking for more!
And the veggie sushi bowl - a little brown rice, green onions, avocados, lightly toasted tofu, and some orange soy sauce vinaigrette mix and voila, you have sushi fit for the stars.
