Making the Best of a Monday

After the last two blissful birthday weekends, starting over again on Monday was difficult.  I had to fight with myself to get out of bed - but nonetheless, arrived to start bootamp a bit earlier than usual so I could try out some moves with my new exercise bands before campers arrived.

After our workout, I decided to reward myself with a tropical smoothie. Check out the beautiful, juicy papaya…

Papaya, banana, shredded coconut, vanilla soy milk, hempseed, and ice.  Delish!

For dinner, I made curried lentils….simmering below.

And finally, dessert - a banana with peanut butter and vegan chocolate chips. YUM!

Curried Lentils Recipe:

Ingredients:

  • 1 AND 3/4 cups water
  • 3/4 cup lentils, rinsed and drained
  • 1 tbsp olive oil
  • 1 cup chopped green onion
  • 1 green pepper, diced
  • 2 jalapeno peppers, diced
  • 2 tbsps chopped canned green chili peppers
  • 1 tbsp whole wheat flour
  • 2 tbsps curry powder
  • 1/2 tsp red pepper flakes
  • 3/4 cup vegetable stock
  • 1 tsp soy sauce
  • 1 tsp rice wine vinegar
  • 1 tbsp chopped fresh cilantro

In a saucepan, combine water and lentils; bring to a boil over medium high heat. Reduce heat to low.  Cover pan and simmer for 25-30 minutes, or until lentils are tender. Meanwhile, in a large frying pan over medium heat, warm the oil. Add the green onion, green pepper, jalapeno, and chili peppers.  Cook, stirring often, for 2-3 minutes, or until tender. Stir in the flour, curry powder, and red pepper and cook for one minute. Whisk in the stock, soy sauce and rice vinegar.  Add the lentils; cook for 1-2 minutes, or until heated through and slightly thick. Sprinkle with the cilantro.  Serve with brown rice.

Peanut Butter, Vegan Chip Banana Recipe:

Ingredients:

  • 1 banana
  • Handful of vegan chocolate chips (try Tropical Source brand)
  • 2 spoonfuls of natural peanut butter (try the Food Mill brand)

Spread the peanut butter generously over the top of the banana, add the chocolate chips. And enjoy!

Thanks for sharing those recipes! I very rarely eat lentils but lately I’ve been curious to try some new dishes with lentils because I keep seeing people with awesome recipes using lentils! :)

Your smoothie sounds amazingly good! I don’t make them as much as I’d like to.

PB and banana is one of my favorite combos. I like that you upped the ante by adding chocolate! :)

I will have to try that lentil recipe. I have some bulk lentils that I’m not quite sure what to do with!
