During the holidays, I always get the typical questions and concerns about what I will eat from the oh so very concerned meat eaters in my life. They usually go something like this:
- What will you eat? Mashed potatoes? Yes, I’ll eat a whole plate full of mashed potatoes and wash them down with a stick of butter.
- Are you going to be OK? Will there be enough for you to eat? I’m pretty certain I won’t starve. If I can make it without meat 364 days out of the year, I think I can handle Thanksgiving.
- Are you going to have some turkey? Um, yeah, and for some dessert I’ll have some bacon wrapped veal.
- I don’t think there will be many vegetarian options, do you want to bring a few snacks just in case? Nope. I’ll just take my chances and if I have to, I’ll just down a bottle of wine to satiate (er, forget) my hunger pangs.
So what do veggies eat for Thanksgiving? Well, I usually go for green beans, mashed taters, yams, salad, and anything else I can get my hands on. This year, I had my very first tofurkey with veggie gravy (courtesy of Bryan) - and I have to admit, it was pretty damn good. The picture doesn’t really do it justice but that’s mainly because I made a big ass mess of my plate. :)

Besides eating, Thanksgiving was filled with a three year old, tennis, pool time and a ridiculously hokey aerial tramway overlooking all of the desert. Isn’t she cute?
