Miso Shirataki Noodle Soup with Oyster Mushrooms

This weekend was especially busy with holiday parties, 20 mile runs and a much needed apartment clean up.  By Sunday evening, I was pooped and ready for a good hot meal and some zoning out in front of the TV.

Since we had no food in the house, we decided to make a trip to our favorite spot, Rainbow Grocery where we ended up setting new record highs for both our grocery spending and time spent in the grocery store (almost two hours, thank you very much).  Aside from it being a rather long and expensive trip, we got a lot of great stuff like delicious oyster mushrooms, mesquite flour, more jars for more kombucha brewing (hooray!) and lots lots more.

The only problem was that I went without much of a plan - I kind of just bought stuff without any real idea of what I would be making. Somehow, with the random assortment of groceries we brought home, I ended up making the best miso soup ever - Miso Tofu Shirataki Noodle Soup with Oyster Mushrooms. Since it was my first time with the Tofu Shirataki Noodles I was a bit nervous…but really satisfied with how it all turned out!

The Tofu Shiratki noodles…they have the weirdest smell when you first open the bag but were great in the soup!

Recipe (Makes 6 servings)

Ingredients:

  • 6 cups of water
  • 10 tablespoons of miso paste
  • 1.5 cups of chopped kale
  • 1 chopped carrot
  • 1 package of House Foods Tofu Shirataki Noodles
  • 2 cups chopped oyster mushrooms

Put kale, carrots, and mushrooms in pot of water and simmer for 10 minutes.  While simmering, drain and rinse the noodles and then microwave for one minute (reduces the weird smell).  Add the noodles to the simmering veggies and simmer for another 10 minutes (or until veggies are tender).  Take some of the cooking water from the pot and dissolve the miso paste (do not boil it!).  Remove the veggies from the heat and stir in the diluted miso paste.

I LOVE House Foods Tofu Shirataki Noodles! Sadly, the ONE store in my city that sold those noodles has shut down. I really miss those noodles. This recipe looks delicious.
