Red Raspberry Galaxy Granola Cookies

In honor of the Galaxy Granola Fat Swap I made some delightfully tasty Red Raspberry Galaxy Granola cookies cooked with Galaxy Granola, oats, nuts and seeds.  They were super yummy and because they were made with granola and oats, I felt like it was totally acceptable to have one for breakfast. ;)

  • 1/2 cup applesauce
  • 1/2 cup brown sugar
  • 1/3 cup yacon or brown rice syrup
  • 1 tsp vanilla
  • 1.5 cup old fashioned oats
  • 1 cup Red Raspberry Galaxy Granola
  • 1 tsp salt
  • 1 tbsp sesame seeds
  • 1 tbsp pumpkin seeds
  • 1 tbsp sunflower seeds
  • 1 tbsp raw shredded coconut (unsweetened)
  • 1 tbsp ground chia or flax plus 3 tbsp water

Preheat oven to 375.  In a large bowl, cream applesauce and sugar together, add yacon (or brown rice) syrup and vanilla until mixed well.  Add oats, Galaxy Granola, and salt.  Fold in sesame seeds, pumpkin seeds, sunflower seeds and coconut.  Mix well.  Finally add the “chia egg” by mixing 1 tbsp ground chia (or flax) with 3 tbsp water.  Add to the mixture and stir completely.

Spoon mixture into non-stick mini cupcake tins.  Bake for 25 minutes or until golden brown.  Remove from oven and let cool completely or they may teat apart easily.  And enjoy!  YUM!

The galaxy raspberry is my favorite! I love how you cut out some of the sugar and use brown rice syrup. Awesome recipe girl :)
