Vegan Mac & Cheese with Chard

February 1, 2010

After a whirlwind business trip to New York  followed by a company offsite in Napa, I was in desperate need of relaxation and of course good food.  :)
Since my bestest friend Tasha who also happens to be a bad ass blogger is moving to Portland in a week, we decided to spend the weekend doing [...]

Taco Bell Drive Thru Diet - Yikes!

January 18, 2010

A friend of mine sent me this video - the Taco Bell Drive Thru Diet - and all I can say is, seriously? This is just insanity to me. You do NOT lose weight from going through the drive thru every day. Learn to cook, exercise, eat real food — not freaking Taco Bell burritos [...]

January 18, 2010

It was a cold and gloomy weekend and now a super rainy MLK Day.  No better way to spend a rainy day than with a hot bowl of soup!  Tried a fabulous Carrot Ginger Soup recipe from Chris over at The Blender Diaries.
All my veggies ready in the blender..

My Morning Blend

January 8, 2010

It has been an exciting week - we not only kicked off 2010, but it was week one of GranolaFit Bootcamp - meaning the whole enchilada (a healthy vegetarian enchilada, of course) combining both the exercise and also the nutrition. Wooo freaking hooo! Everyone do a celebratory cartwheel and then get down and give me [...]

I Still Love You the Most

January 7, 2010

Of all the things I have made in my Blendtec over the past week, I heart my homemade peanut butter the most. So much so that I went to Whole Foods and bought 2.5 lbs of organic roasted peanuts. Farewell Food Mill and HELLLLO homemade peanut butter.

Once I master the art of pb, I think [...]

Kale Tacos

January 6, 2010

Just wrap some kale around some Amy’s refried black beans, quinoa, avocado, and some yummy homemade salsa (thank you Blendtec!!).

The Holidays are OVER — Hooray!

January 4, 2010

Yikes, I can’t even believe I’m saying this and maybe I shouldn’t. But here goes, I am REALLY glad the holidays are over!  I’m actually happy to be back home, in my own bed, on my own schedule, and cooking my own food. Well, with one exception — the AMAZING creamy cauliflower soup I made for [...]

Let the Baking Begin!

December 18, 2009

I’m never really sure why I bake during the holidays. There are already so many sweets, cookies, cakes, and breads lying around my office tempting me to eat them.  But, tis the season, I guess.
I got this recipe for Ginger Twist Gingerbread (say that five times fast standing on your head) from Mighty Leaf Tea [...]

Miso Shirataki Noodle Soup with Oyster Mushrooms

December 7, 2009

This weekend was especially busy with holiday parties, 20 mile runs and a much needed apartment clean up.  By Sunday evening, I was pooped and ready for a good hot meal and some zoning out in front of the TV.
Since we had no food in the house, we decided to make a trip to our [...]

No Leftovers Found Here

December 4, 2009

While some of you were probably eating Thanksgiving leftovers all last weekend (and maybe even still this week), Bryan and I were driving up  101 and enjoying a meal at Santa Barbara’s The Natural Cafe.  What can I say, we’re a couple of dirty vegetable eating crazies.
Our first course consisted of some local red Santa [...]
